This is a go to soup for me. Quick, warming and cleansing. The spices are complex enough to keep it interesting. V, GF.
Ingredients
- 1 C red lentil
- half a bunch kale (or spinach or any other greens you have around)
- 1/2 white onion
- 2 cloves garlic
- 1-inch nob fresh ginger minced
- 5 C water or veggie broth
- 1 TB sesame oil
- 1/4 ts mustard seed
- 1/4 ts cumin seed
- 1 ts turmeric
- 1/2 TB garam masala
- salt & pepper to taste
Directions:
- rinse red lentils thoroughly
- toast mustard & cumin seeds in oil until mustard seeds pop
- add onion, garlic & ginger
- when those soften (about 5-min), add spices (garam masala and turmeric), let cook for a minute
- add red lentils, incorporate (stir) for about a minute
- add water
- bring to boil, then lower to simmer for 15-minutes
* optional: use immersion blender to make it a little creamier or leave as is
- throw in greens
- salt & pepper to taste, a squirt of lemon or some fresh cilantro can adds brightness
