Cooling Cilantro-Mint Chutney (Ayurvedic Summer Recipe)

This Ayurvedic cilantro-mint chutney is cooling, vibrant, and easy to whip up. It's packed with herbs that naturally reduce heat in the body and support agni (your digestive fire)—making it a perfect recipe for summer meals, picnics, or pitta-balancing diets.


Why This Chutney Supports Summer Health

In Ayurveda, summer is governed by pitta dosha, which brings the qualities of heat, intensity, and sharpness. To stay in balance, we need foods that are:

  • Cooling (like mint and cilantro)

  • Digestive (like ginger and lime)

  • Light and fresh rather than heavy or oily

This chutney hits all those notes. It’s a traditional side dish in Indian cuisine and a staple in seasonal Ayurvedic cooking.


Ingredients (Makes ~1 cup):

  • 1 bunch fresh cilantro (stems okay if tender)

  • ½ bunch fresh mint leaves (stems removed)

  • Juice of 1 fresh lime

  • 1 tsp grated fresh ginger

  • Pinch of salt (Himalayan or sea salt preferred)

  • Optional:

    • ½ tsp maple syrup (if herbs are bitter)

    • ¼ small green chili (if you like a kick)

  • 2–4 Tbsp filtered water, as needed for blending


Instructions:

  1. Rinse cilantro and mint thoroughly. Remove any thick stems from the mint.

  2. Combine all ingredients in a high-speed blender or food processor.

  3. Blend until smooth, scraping down sides as needed. Add water 1 tablespoon at a time until you reach your desired consistency.

  4. Taste and adjust: Add more lime for brightness, salt for balance, or a touch of maple syrup to mellow bitterness.


How to Store It:

  • Store in a glass jar or airtight container in the refrigerator.

  • Best used within 3–4 days for optimal flavor and freshness.

  • You can also freeze in ice cube trays for future use.


Ways to Use Cilantro-Mint Chutney:

  • Drizzle over grain bowls or salads

  • Serve alongside kitchari, roasted vegetables, or dosa

  • Use as a dip for steamed potatoes, carrots, or crackers

  • Thin with water and use as a summer salad dressing


Ayurvedic Tip:

If you tend to run hot, irritable, or have signs of excess pitta (acid reflux, inflammation, skin issues), this chutney is a delicious daily addition to help balance your system naturally.
